Heat a pan and add 2 tablespoons of extra-virgin olive oil. Then, add 400 g of ground beef. Cook until brown.
Next, add diced bell pepper and 50 g of sliced scallions. Give that a good mix.
Then, add 1 tablespoon of tomato paste and 1 teaspoon of dry Italian herbs. Season with salt and pepper.
Next, add 200 g of canned diced tomatoes. Toss it well.
Take an oven-proof deep pan and grease it with olive oil. Place cooked noodles into the pan. Add 100 g of sour cream and 50 g of grated parmesan. Season with salt and mix. Place the beef mixture on top. Put 150 g of grated cheddar on the beef.
Bake your casserole for 20 minutes at 200 degrees C.
