Coconut Pancakes with Mango and Lime Syrup


  • Castor sugar 250 g
  • 1 lime
  • Flour 100 g
  • Baking powder 1 teaspoon
  • Desiccated coconut 100 g
  • 1 egg
  • Coconut milk 100 ml
  • Runny honey 50 ml

Cooking Instructions

  1. For the lime syrup simply add 250 ml of water into the pan. Then, add 250 g of castor sugar and juice and zest of a lime. Simmer for 10 minutes.
  2. To make easy pancake batter, add 100 g of flour, a teaspoon of baking powder and desiccated coconut into a bowl. Then, crack in an egg and 100 ml of coconut milk. Whisk into the batter until well combined. Sweeten with 50 ml of runny honey.
  3. Add melted butter into a hot pan. Then, spoon the batter into the pan. Fry until nicely colored on both sides.
  4. Serve with sliced fresh mango and drizzle over citrusy syrup. Cook this recipe with a photo!
