For the lime syrup simply add 250 ml of water into the pan. Then, add 250 g of castor sugar and juice and zest of a lime. Simmer for 10 minutes.
To make easy pancake batter, add 100 g of flour, a teaspoon of baking powder and desiccated coconut into a bowl. Then, crack in an egg and 100 ml of coconut milk. Whisk into the batter until well combined. Sweeten with 50 ml of runny honey.
Add melted butter into a hot pan. Then, spoon the batter into the pan. Fry until nicely colored on both sides.
