First, prepare a chicken marinade. Add 150 ml of buttermilk into a bowl, then, add 100 ml of dill pickle juice. Next, add 30 ml of hot sauce, a pinch of kosher salt and black pepper. Give that a good mix.
Take 12 chicken thighs and place them into the marinade. Place into the fridge for 2 hours.
Next, cook a delicious sauce. Take a bowl and add 100 ml of runny honey. Chop pickled cucumbers and add to honey. Then, add 50 ml of pickle juice and 20 ml of hot sauce.
Next, take 300 g of all-purpose flour and add 20 g of paprika. Then, add dry mustard and a pinch of kosher salt. Give that a good mix. Add 30 ml of buttermilk and mix again.
Take marinated chicken out of the fridge and place it into flour. Make sure that every piece is covered with flour.
Take a deep pan; add vegetable oil, so that it could cover the chicken. Place your chicken bites into the pan and fry for about 4 minutes.
