First, cook sautéed onion. Finely chop 2 medium sized onions and place them into a hot pan with 1 tablespoon of olive oil. Then, add finely chopped fresh thyme leaves, 2 teaspoons of kosher salt and 1 teaspoon of freshly ground black pepper. Stir it occasionally at medium heat for 10 minutes just until the onions are translucent but not brown. Then, off the heat, add 3 tablespoons of Worcestershire sauce, 100 ml of chicken stock and 1 tablespoon of tomato paste. Then, mix everything together and set aside to cool slightly.
Take 1,3 kg of ground beef and put it into the bowl. Then, add your sautéed onions to the minced meat. Next, add 150 g of dried breadcrumbs and 2 eggs. Give that a good mix.
Put baking paper on the baking tray. Then, lay your meat forming a rectangular. Next, spread 100 g of ketchup right on the top of the loaf.
Pour some water into oven-proof pan and place it beneath.
Then, place you meat into the oven at 180 degrees for an hour and 10 minutes over the tray with water.
