Perfect Slow-Cooked Beef


  • Beef shin 500 g
  • Carrot 50 g
  • Shallots 50 g
  • Celery 50 g
  • Ginger 30 g
  • 1 bulb of garlic
  • Tomato puree 30 g
  • A glass of dry white wine
  • 1 orange
  • Chicken stock 100 ml
  • Parsley 30 g
  • Vegetable oil
  • Salt
  • Pepper

Cooking Instructions

  1. Start by frying the beef shin in the hot oil. Then, season with salt and pepper. Fry until brown, then, set aside.
  2. In the same pan place carrots, peeled whole shallots, sliced celery; peeled and chopped ginger and garlic.
  3. Next, add tomato puree and cook for a few minutes.
  4. Add the shin back into the pan with a glass of dry white wine and a juice of one orange.
  5. Pour in the chicken stock, season with salt and pepper.
  6. Simmer for an hour and 20 minutes.
  7. This dish is perfect with gremolata – dry Italian salsa made with chopped herbs. Chop parsley and garlic together. Add orange zest.
  8. When the beef is cooked, scatter over some gremolata. Cook this recipe with a photo!
