  • 1 red onion
  • 1 chili
  • 2 cloves of garlic
  • Roast cumin 1 tablespoon
  • Tinned tomatoes 200 g
  • Black beans 200 g
  • 2 corn tortillas
  • 5 eggs
  • Montgomery cheddar 100 g
  • Chili flakes 1 tablespoon
  • Fresh coriander 20 g
  • Olive oil
  • Salt
  • Pepper

Cooking Instructions

  1. This can become you party Halloween dish by Gordon Ramsay. Cut one red onion and slice one chili. Next, slice 2 cloves of garlic.
  2. Get your pan nice and hot, add some olive oil. Place all your vegetables into the pan. Season with salt and pepper. Add a tablespoon of roasted cumin. Cook for 2 minutes.
  3. Next, add 200 g of tinned tomatoes. Give that a good mix and reduce for 2 more minutes.
  4. Then, add tinned black beans and cook for 1 minute.
  5. Oil and season oven proof dish for your spicy egg brunch.
  6. Take corn tortillas, slice them in half and let them stick to the side. Place one tortilla in the center.
  7. Take your vegetable mix and place it on top. Spread that nice and smoothly.
  8. Crack 5 eggs into the vegetables, then, grate 100 g of Montgomery cheddar oven the eggs. Next, sprinkle 1 tablespoon of chili flakes.
  9. Bake in the oven for 8-10 minutes at 180 degrees. Finish with chopped coriander on top. To make it look like a Halloween dish sprinkle some tomato puree on top. Cook this recipe with a photo!
