Take the whole chicken; season it inside with salt and pepper. Place your delicious stuffing just inside your chicken. Take a large lemon and put and push the lemon in. You need a lemon not to let the stuffing fall out of the chicken.
Pour some olive oil on top of your chicken. Sprinkle some salt and pepper on top. Then, spread a teaspoon of paprika on top. Rub that in with your hands.
Take a deep baking tray and pour 400 ml of white wine and 400 ml of water. Place the chicken into the tray. Add 4-5 sprigs of thyme.
Next, cover your chicken with tin foil. Make sure that the foil is folded tightly around the baking tray. Cook for 1 hour at 180 degrees with a foil on.
Then, take the chicken out and remove the foil lid. Give it another 30 minutes to crisp up the skin.
Sieve all the juice from the tray into the separate bowl. Take out the stuffing into the serving bowl. Carve the chicken. Serve it with the stuffing and delicious gravy.
